I have also found that it helps to allow for the time it takes to cook your beets (or raw beets) to be less than the time it takes to chew them. After all, if you know you should eat some raw beets, you can give yourself more time to chew them up.
I love this idea of cooking raw beets in the oven, as you can slice them thinner than you can slice raw potatoes.
