At first glance, this may appear to be a strange title. How did one decide to name such a project? Well, this is a “Berkshire food project”.
For many years, the food and beverage industry has been a subject of ridicule in the United States. It’s even been referred to as the “food police” because of the way food companies police you for eating too much of anything. But that’s not the only source of ridicule. There have been some of the most bizarre and ludicrous food-related headlines in American history.
Like the food police, many of these stories are true. But in the case of the original “Berkshire Food Project”, it was a story told by one of the most famous chefs in the nation. I had the pleasure of interviewing Gordon Trowbridge about the story when he first came to the United States to open his flagship restaurant, the Trowbridge.
Trowbridge had been living in America for 22 years. And in his very first year in America, he opened his beloved restaurant in New York, and by the end of that first year, he had become the most well-known and revered chef in America. But for the most part, that was pretty much all he ever did. He was a chef, but he was also an actor, a musician, a writer, a director, a producer, a professor, and a manager.
It’s hard to imagine that the man responsible for so much of our culture’s most cherished culinary accomplishments was a one-man show. But he was a man who was able to do something different. He did it with the simple intention of making the food he loved better. He did it with the goal of making it more interesting, more exciting, more of a pleasure to eat.
Berkshire was a culinary innovator who was able to combine the best qualities of the culinary arts to form a new type of cuisine. This is one of the reasons that his name is so well known. He was an innovator who made food better.
Berkshire’s culinary innovations may have been the reason why he was so well known. But to really understand what he did, we need to look at his work in the culinary arts. Berkshire was a man who was able to make food better. He helped turn cooking into an art form.
It’s an excellent idea to start a restaurant today and make some money. You don’t need us to pay for it.
