This is the second recipe from The Food City CLE and it’s a dish I’ve made countless times. It’s a very interesting dish to me because it takes time and attention to come together. I like to have it on a hot summer day when tomatoes are at their peak when the sun is hot and it’s also one of my favorite summertime foods.
The thing about this dish is that it takes a LOT of prep work. You gotta wash and peel the tomatoes, chop the tomatoes, chop the onion, chop the garlic, chop the peppers and the zucchini. Then you just mix them all up with the rest of the ingredients and then you put it all together and bake it. This recipe is made easier by having everything already prepared, but I didn’t find that to be a great thing.
If you’re looking for an easy, quick, and healthy summertime meal, and you’re not in the mood for tomatoes, maybe try this recipe. The dish seems to be surprisingly filling and delicious, and it’s super easy to make. Plus, it’s the perfect thing to make the kids eat after dinner if the weather gets too hot.

I think because of how much tomatoes I used, I was able to get it to be a little too sweet.
