I’m not going to go into the history of the ikumi food wars, and I’m not going to be a part of it, but I will mention that these so-called food wars were ignited by a new restaurant in Tokyo called Sakae-ya. They were the first food-focused company that used the ikumi design in their menu. This is a term used to describe the kind of dishes that are created by food-focused companies.

Food is one of the main reasons people go to Japan, so if you want to make it your own, it would be best to get in on the ground floor.
Sakae-ya’s dishes are not very authentic. They are more of a fusion of old and new techniques, such as deep-frying, pickled fish, and grilled vegetables, than dishes made out of actual fish. But that’s okay, because the more authentic food you create, the more people will like it, and the sooner they realize they like it, the sooner you’ll be able to sell it.
There’s no way to know how good of a dish you’ll be. For example, if you are making a yakiniku that has pickled fish, you will know you’re doing it right when you get a bunch of people asking for your recipe. The ikumi food wars take place all over the world and they’re pretty much the same thing. The difference is that the ikumi food wars are really about gaining recognition for your restaurant, rather than gaining recognition for the food you serve. Think of it like an ad campaign. The reason we think of it as a food wars is because the more you eat the more you will gain recognition for your restaurant. So if a restaurant is popular, the more people want to eat there.
The ikumi food wars, like any other ad campaign, really comes down to the credibility factor. A restaurant with lots of ikumi food has a better chance of gaining a lot of media attention. So the more they’re doing, the more they’re getting noticed (which means more media coverage).
