What started as a simple one-sided conversation about some chinese food, escalated into a passionate discussion about our food culture. For those who aren’t familiar with chinese food, it is a very different way of eating in that a lot of the spices used aren’t actually used to flavor the food. For the chinese, when they make something they must first find a way to use as many spices as possible to create a flavor that is both unique and pleasing. In chinese cooking, spices are added one at a time, and that is why they are so incredibly versatile and useful. We all know what a good spice is, but we don’t often realize that there is much more to spice than the ones we usually see in the commercial food aisle.
