This recipe for El paso is from Chef Miguel Aranda who is the chef at La Vida en la Mesa. The recipe comes from his cookbook, One More Bite. I don’t make this recipe every time, and I’m glad I’m not the only one to make it.
The recipe comes from my dad who I had taken to La Vida en la Mesa in the early 80s when I was a little kid. I remember his recipe was so good, we usually made it for each other. One time I took my kids to El Paso and asked him to make it for them. But, even though I made it, I never actually had the chance to taste it. I can tell you that it is a very tasty dish.
The recipe comes from my dad’s book and is very similar to my recipe from The Unofficial Cookbook.
I can imagine that most of the recipes of the era came from a cookbook called The Unofficial Cookbook. I can’t say I am familiar with it, but I suppose it could be a similar book. I wonder how many generations back that book would have been published. It would have been a very popular cookbook back then, so I imagine that it would have been very popular.
